This Mediterranean-inspired salmon dish is ready in under 30 minutes and you won’t believe how good it is! Plus, it’s packed with flavor AND mental health benefits too! 🧠 ✨

Why it’s good for your mind:

  • Salmon is rich in omega-3 fatty acids, which have been linked to reduced symptoms of depression and anxiety. 🐟

  • Broccolini and Tomatoes bring in antioxidants like vitamin C, helping to lower stress and inflammation in the body.🍅

  • Lemon and fresh herbs like dill and oregano contain compounds that support brain health, and promote calm and focus. 🍋🌿

Mood Boosting Air Fryer Mediterranean Salmon

With Roasted Potatoes, Broccolini, and Tomatoes 🍋

Ingredients:

  • Red potatoes (approx 8 baby potatoes quartered, or 2 regular potatoes cut into eights)

  • 2-4 salmon filets (about 6 oz / 170g each)

  • 7 tablespoons olive oil (105ml)

  • 2 lemons, juiced (plus lemon slices for garnish)

  • 2 cloves garlic, minced

  • 4 tablespoons fresh dill, chopped

  • 1 teaspoon dried oregano

  • 1 cup cherry tomatoes (150g)

  • 1 bunch broccolini

  • Feta cheese, at least ½ block cubed (4oz/100g)

  • Salt and pepper to taste

Method:

  1. Toss the potatoes with 2 tbsp olive oil, salt, and pepper. Air fry at 400°F (200°C) and set time for 20 minutes.

  2. While potatoes are roasting, toss broccolini and tomatoes in 2 tbsp olive oil, salt, and pepper.

  3. Mix 3 tbsp olive oil with lemon juice, garlic, dill, oregano, salt, and pepper. Spoon over both sides of the salmon filets.

  4. After 10 minutes, arrange the salmon, broccolini, tomatoes, and lemon slices on top of the potatoes. Cook for another 10 minutes (7-8 minutes for medium-rare).

  5. In the last 5 minutes, top with feta to let it melt slightly.

  6. Garnish with extra lemon slices and serve hot!
